Nishimura Toshihide

Director of the Umami Information Center and professor emeritus at Hiroshima University and the Japan Nutrition University. Took his current position after a long career teaching and researching at those universities and others, including the University of Tokyo and the Nippon Veterinary and Life Science University. Fields of research include dietary meat and health, food and flavor, and more.
